The grapes harvested by hand at full maturity then vinified without adding sulphites give this wine suppleness and deliciousness! Freshness of spices, roundness of blackberries, structure with silky tannins.
For this vintage, we decided to carry out carbonic maceration . This involves manually harvesting the grapes in whole bunches, then putting them intact in a vat for 10-15 days. Maceration will therefore not take place between the juice, the skin and the seeds but rather inside each grape berry . This allows you to obtain richer aromas, more roundness and deliciousness.
