Tasting Notes & Food Pairings

  • The Profile: A complex and intense nose featuring ripe orchard fruits, toasted brioche, and delicate spicy undertones. On the palate, it is perfectly balanced with a velvety, creamy texture, vibrant citrus zest, and a long, persistent finish that speaks to its exceptional pedigree.
  • Classic Pairings: Elevate your dining with fresh oysters, aged Parmesan, or high-quality jamón ibérico.
  • Irish Favourite Pairings: For a luxurious night in, pair this Champagne with the finest fresh Fish Pie; the wine’s sharp acidity and complex bubbles cut through the richness of the batter, while the subtle brioche notes complement the sweetness of the fish. For an indulgent comfort meal, try it with a gourmet Brie/Camembert; the Champagne’s structure effortlessly balances the salty, creating a world-class contrast of textures and flavours.

Awards & Accolades

  • Vivino Recognition: This wine consistently ranks in the top 1% of all wines in the world and the top 1% of all wines from the Champagne region, serving as a testament to its elite status.

How the wine is made

This cuvée is crafted through a meticulous assembly of a single harvest's expression blended with most precious reserve wines, some aged in magnums for up to 15 years. Composed of over 85% Grand and Premier Cru fruit, the wine undergoes cellar aging for twice as long as the legal requirement, ensuring unparalleled depth. It is moderately dosed at 7–8 grams per litre, a delicate balance that allows the pure character of the Pinot Noir, Chardonnay, and Meunier grapes to shine through with absolute clarity.

Why we love this producer

Bollinger remains a standard-bearer for traditional excellence, with a history as rich and enduring as the wine itself. The name "Special Cuvée" was coined in 1911 by a British agent who felt the standard "non-vintage" description simply did not do justice to the quality of the bottle, a sentiment that rings just as true today. We love their unwavering commitment to heritage and their refusal to compromise, ensuring that every bottle is a direct reflection of a century-old expertise.

Sustainability & Farming Practices

Bollinger is a leader in environmental responsibility, demonstrating that true luxury and sustainability go hand in hand.

  • Certifications: The estate proudly holds the B Corp certification. This is a rigorous, globally recognized standard that validates their commitment to social and environmental performance, transparency, and accountability, ensuring they meet the highest verified standards for both people and the planet.

  •  Vineyard Practices: Beyond their B Corp status, the estate prioritizes high-standard viticulture, including extensive biodiversity management and a focus on long-term soil health to ensure that their iconic terroir continues to thrive for generations to come.
