How the wine is made
The grapes are harvested at the break of dawn, between 4:00 AM and 5:00 AM, to lock in natural cool temperatures and protect the delicate fruit aromas. Transported via a gentle conveyor belt system to prevent any premature crushing of the berries, the Gamay undergoes an incredibly gentle pressing before a temperature-controlled fermentation in stainless steel. It is then aged on its fine lees for two months, resulting in a bone-dry finish with less than one gram of residual sugar. To maintain absolute purity, the winemakers add no sulfites during the entire vinification process, applying only the bare minimum required just before bottling to ensure stability.
Why we love this producer
Domaine des Galloires is a brilliant, forward-thinking estate located in the Coteaux d'Ancenis region of the Loire Valley, where the vines thrive on complex gneiss soils. Instead of relying on industrial shortcuts, the estate embraces a polycultural family-farm tradition by keeping their own herd of cattle, which directly provides organic manure to fertilize and structure the vineyard soils. Their deep respect for the land is evident in their painstaking commitment to mechanical weeding and bioprotective methods, proving that modern independent winemaking can beautifully honor historical roots.
Sustainability & Farming Practices
Highlighting eco-conscious methods, the estate works diligently in harmony with nature through specific green practices:
