Tasting Notes & Food Pairings
- The Profile: A luminous, elegant 100% Chardonnay Champagne with a fine, persistent perlage. The nose is complex and inviting, offering the classic, crystalline purity of Chardonnay with layers of toasted brioche, white stone fruits, and a hint of honeysuckle, leading to a textured, generous palate that finishes with a crisp, refreshing mineral lift.
- Classic Pairings: A perfect match for classic gourmet fare such as roasted poultry, wild mushroom risotto, or fresh king prawns.
- Irish Favourite Pairings: For an elevated midday treat, pair this Champagne with a traditional Ploughman’s Lunch; the wine’s bright acidity cuts through the sharpness of a mature cheddar and the richness of a good pickle, while the subtle bready notes complement the crusty farmhouse bread. For a casual yet luxurious comfort snack, enjoy it with warm, sausage rolls; the Champagne’s fine bubbles and refreshing finish provide a sophisticated contrast to the savoury, flaky pastry and seasoned pork, lifting the flavours of this Irish favourite to a new level.

How the wine is made
As independent artisans, the winemakers meticulously monitor their harvest from the first blossom to full maturity, ensuring grapes are picked only at their absolute peak of ripeness. Each individual plot is harvested and vinified separately to respect the unique character of the terroir, with only the healthiest bunches entering the process. To preserve the purity of the fruit, the juice is immediately chilled after pressing to maintain total control over the fermentation process, resulting in a Champagne of exceptional precision and grace.
Why we love this producer
Jacques Robin is a true independent Champagne house, defined by a hands-on, artisan spirit that is increasingly rare in such a famous region. They operate with the belief that if the foundation, the vineyard, is not sound, the final wine cannot be exceptional. We love them for their meticulous, personal connection to their terroir and their commitment to bottling the unique character of their plots rather than producing generic, mass-market blends.
Sustainability & Farming Practices
While the house does not hold a formal certification, they practice a deeply considered, natural approach to viticulture that prioritizes long-term vine health over mass output.
- Vineyard Practices: Their philosophy is built on absolute respect for nature. By monitoring their vines with extreme care throughout the growing season and utilizing minimal intervention during winemaking, they focus on preserving the vitality of their land and the natural integrity of their grapes, ensuring each bottle reflects the authentic terroir of their family estate.
