Tasting Notes & Food Pairings

The Profile:

Pale straw in colour, with delicate aromas of green apple, white peach and subtle floral notes. The palate is fresh and dry, combining citrus fruit, gentle minerality and lively acidity for a clean, refreshing finish.

Classic Pairings:

Caprese salad with buffalo mozzarella, grilled sea bass with lemon and herbs, seafood risotto, or prosciutto with melon.

Irish Favourite Pairings:

    • Dublin Bay Prawns in Lemon Butter: The wine’s fresh acidity balances the rich butter sauce while bringing out the sweet flavour of the prawns.
    • Chicken & Mushroom Pie: The crisp, refreshing style cuts through the creamy filling and pastry, keeping the pairing light and balanced.
    • Pan-Fried Atlantic Salmon with Herb Butter: The citrus and green apple flavours complement the salmon while helping to balance its natural richness.

    Awards & Accolades

Vivino: Highly rated by wine lovers on Vivino, consistently ranking among the Top 10% of wines worldwide for its freshness, quality and easy-drinking style.

    How the wine is made

Produced by Cantina Castelnuovo del Garda using Pinot Grigio grapes grown in the glacial morainic soils around Lake Garda. The combination of warm sunshine and cooling Alpine breezes helps the grapes develop fresh fruit flavours while maintaining their natural acidity. The grapes are gently pressed and fermented in temperature-controlled stainless steel tanks, with no oak ageing, allowing the pure character of the variety and vineyard to shine through.
