Château de Thésée La Closerie is a fresh and lively Sauvignon Blanc from the Touraine region of the Loire Valley. It’s bright and refreshing, with flavours of citrus and green apple alongside a clean, mineral finish. Easy-drinking and versatile, it’s a great choice for relaxed dinners, summer lunches or simply enjoying a chilled glass with friends.

Tasting Notes & Food Pairings

The Profile:

Opens with aromatic white peach, crushed lemongrass, and pink grapefruit on the nose, following through to a mouthwatering palate of green apple, gooseberry, and a clean, flinty mineral finish.

Classic Pairings: Pairs beautifully with fresh goat cheese (such as Valençay or Crottin de Chavignol), pan-seared sea bass with lemon-herb butter, or a vibrant spring asparagus risotto.

Irish Favourite Pairings:

  • Fresh Irish Goats’ Cheese Salad – The wine’s crisp citrus and mineral character works beautifully with creamy goats’ cheese, while its freshness complements beetroot, apple or a simple herb dressing.

  • Beer-Battered Irish Fish & Chips – Sauvignon Blanc is a great match for fried fish. Its bright acidity cuts through the crispy batter and rich chips, while the citrus notes keep the pairing fresh.
  • Smoked Irish Salmon with Brown Bread – The wine’s clean, lively character pairs particularly well with the richness of smoked salmon, with its citrus freshness balancing the smoky, salty flavours.

How the wine is made

Grown on clay and flint-rich limestone soils along the banks of the Cher River, the Sauvignon Blanc grapes are carefully harvested to maintain maximum freshness and balance. The fruit undergoes a gentle pressing followed by temperature-controlled fermentation in stainless steel vats to preserve pure fruit aromatics. Aged on fine lees prior to bottling, the wine achieves a delicate texture while keeping its signature vibrant acidity completely front and center.
