With no added sulphites and very little intervention, it’s a great choice for anyone who enjoys fresh, characterful French reds without the heaviness of oak.

The Profile:

An expressive nose packed with wild blackberries, crushed black cherries, and signature garrigue herbs (thyme and rosemary). The palate is vibrant and juicy with supple tannins, balance, and a fresh, clean finish.

Classic Pairings: Chargrilled lamb chops with herbs de Provence, slow-roasted Mediterranean vegetables, or a platter of aged sheep's milk cheeses.

  • Lamb Chops with Rosemary & Garlic – A great match for the Syrah, Grenache and Mourvèdre blend. The herbs bring out the wine’s own subtle wild-herb character.

How the Wine Is Made

Grown on a limestone-pebble plateau at 200 meters altitude in Saint-Chinian, the grapes benefit from cool night breezes that lock in natural acidity. The fruit is entirely hand-harvested from certified organic vines and carefully sorted to guarantee perfect quality. Fermentation occurs naturally with indigenous yeasts, and the wine is bottled completely free of added sulfites or enological inputs, leaving behind nothing but pure, pristine fruit expression.

Sustainability & Farming Practices

  • Certifications: Certified Organic (Bio) and crafted entirely without added sulfites (sans sulfites ajoutés).
  • Vineyard Practices: Located inside a designated Natura 2000 protected biodiversity zone. The vineyard hosts twenty beehives to promote natural pollination, relies on eco-grazing sheep to manage undergrowth naturally, and maintains bat houses to control pests without synthetic chemicals. Hand-harvesting ensures the land and vines remain healthy for generations to come

Irish Deliveries are usually made within 24 hours of shipping, excluding weekends and bank holidays.
