A fresh and lively Tuscan white with plenty of character, I Veroni Achillea Vermentino is a lovely choice for anyone who enjoys crisp, refreshing wines. Made from organically grown Vermentino grapes, it offers bright citrus, fresh apple and delicate floral notes, with a subtle mineral finish. Perfect as an aperitif or alongside seafood, this is an easy-going Italian white that is full of freshness.

Tasting Notes & Food Pairings

  • The Profile: Aromas of citrus, yellow flowers and fresh Mediterranean herbs, with hints of pineapple, crisp apple and white peach. The palate is dry and refreshing, with lively acidity and a pleasant saline, mineral finish.
  • Classic Pairings:
    • Grilled prawns with garlic, lemon and olive oil.
    • Seafood linguine or a light seafood risotto.
    • Fresh mozzarella, burrata or goat's cheese with summer salads.
  • Irish Favourite Pairings:
    • Fish and chips: The wine's crisp acidity and refreshing character cut through the richness of the golden batter.
    • Smoked salmon and brown bread: The citrus and fresh fruit flavours complement the smoky salmon, while the acidity balances its richness.
    • Chicken and mushroom toastie: The fresh acidity lifts the creamy filling and balances the buttery toasted bread.

How the wine is made

The Vermentino grapes are organically grown in the Tuscan hills around Pontassieve, where the vineyards sit approximately 300 metres above sea level. The grapes are hand-harvested and gently pressed before fermentation in temperature-controlled stainless steel tanks. The wine then spends around five months in stainless steel to preserve its fresh fruit flavours, followed by a short period in bottle before release.

Why we love this producer

Fattoria I Veroni is an ancient Tuscan estate with winemaking heritage stretching back to the 16th century, thoughtfully restored and family-run by the Malesci family. Situated in Chianti Rufina northeast of Florence, the estate benefits from dramatic day-to-night temperature swings that yield fresh, bright Sangiovese with unmatched depth. We admire their dedication to single-vineyard parcel crafting and organic stewardship, delivering authentic Tuscan soul without aggressive oak manipulation.

Sustainability & Farming Practices

  • Certifications: Officially Certified Organic estate.
  • Vineyard Practices: Hand-harvesting all fruit, managing soil fertility through cover cropping, avoiding synthetic pesticides and fertilizers, and maintaining local woodland biodiversity across their high-elevation terraces.
