Made from 100% Catarratto, one of Sicily's best-loved native grape varieties, this fresh, vibrant white is full of citrus and ripe orchard fruit flavours. Named Aisha in honour of the island's Arab-Norman heritage, it finishes crisp and dry with a subtle mineral edge.

Pale straw-yellow with bright green highlights, bursting with fresh lemon zest, white peach, wild herbs, and orange blossom. On the palate, it’s dry, lively, and incredibly crisp, finishing with a satisfying punch of salty minerality and bright citrus.Â

How the wine is madeÂ
Grown in the sunny, clay-rich hills of Salemi in Western Sicily, where cool night breezes help preserve natural acidity. The Catarratto grapes are harvested by hand in mid-September to keep the fruit in pristine condition. After a gentle soft pressing, the juice ferments at low temperatures in stainless steel tanks, preserving its natural aromatics before aging on fine lees for several months to build a subtle, silky texture.Â
