The Profile:

A brilliant straw-yellow in the glass with subtle greenish glints, releasing an inviting bouquet of white blossoms, lemon peel, green apple, and juicy white peach. The palate is lively and dynamic, combining citrusy acidity and saline minerality with a soft, smooth, and persistent finish. 

Classic Pairings:

Pan-seared sea bass, grilled calamari with lemon and herbs, spaghetti alle vongole, or fresh caprese salad.

How the wine is made 

Crafted in the rolling, clay-rich hills of Salemi in Western Sicily. Harvested in two distinct stages to maximize character—the Pinot Grigio is hand-picked early in August to lock in bright acidity, while the Catarratto is picked in mid-September at peak aromatic ripeness. Following a gentle soft pressing, the juice ferments at cool, controlled temperatures (14–16°C) in stainless steel tanks. The two wines are blended and aged on their fine lees for four months with periodic *bâtonnage* (lees stirring) to build a smooth, rounded mouthfeel without masking fruit purity
