Tasting Notes & Food Pairings

The Profile:

A bright ruby red color opens into a classic Tuscan nose of fresh sour cherries, wild red berries, and delicate floral violets, underpinned by earthy spice and subtle balsamic undertones. The palate is crisp, lively, and dry, driving vibrant red fruit flavors with Sangiovese’s signature mouth-watering acidity and smooth, finely structured tannins.

Classic Pairings:

Traditional Tuscan bistecca, pasta with rich tomato ragù, Margherita pizza, or aged Pecorino cheese.

Irish Favourite Pairings:

  • Gourmet Chipper Taco Chips: The spicy, seasoned minced beef, rich cheese sauce, and fried chips provide plenty of salt and fat. Sangiovese’s high natural acidity refreshes the mouth between bites, while the meat proteins soften the wine’s natural tannins to bring out its juicy cherry flavors.

  • Roast Pork Chops with Crackling & Apple Sauce: Sangiovese is a classic match for pork. The vibrant acid slices cleanly through the salty, fatty crackling, while the sour cherry fruit core complements the mild sweetness of the cooked apple.

  • Smoky Bacon, Cabbage, and Buttered Mashed Potatoes: The tart red berry and earthy profile of Chianti complements the smoky, salty nature of boiled bacon. Its crisp finish effortlessly lifts the rich, buttery texture of the mash.

Awards & Accolades

Vivino Recognition:  Holds a strong community rating, earning a spot in the Top 8% of all wines in the world and the Top 14% of Chianti wines globally.

How the wine is made

Crafted predominantly from organically grown Sangiovese grapes cultivated in the sun-drenched hills of Tuscany. The fruit undergoes careful temperature-controlled fermentation in stainless steel tanks to preserve its natural varietal freshness, bright red fruit aromatics, and signature acidity. Following gentle maceration and malolactic fermentation, the wine rests in steel and large oak vessels to achieve a soft, balanced structure while maintaining a clean, wood-unencumbered character before bottling.

Why we love this producer

Le Chiantigiane, the producer behind the Oro dei Sani label, operates as a historic Tuscan winemaking cooperative dedicated to safeguarding authentic local viticulture. By uniting passionate local grape growers across Tuscany, they focus on low-intervention techniques and traditional styles that put the land and grape variety first. We love them because they make world-renowned regional classics accessible, honest, and consistently delicious without resorting to heavy-handed cellar oak or artificial polish.

Sustainability & Farming Practices

The vineyards are maintained in accordance with European standards without synthetic pesticides, chemical weedkillers, or artificial fertilizers.

Vineyard Practices: The growers focus on soil health and natural balance across their Tuscan plots. By implementing cover cropping between vineyard rows to promote biodiversity and relying on careful canopy management and hand-tended care, the estate works in harmony with the natural Tuscan ecosystem.
