Discover a beautifully structured Italian sparkler that elevates the traditional bubble game. This elegant Gran Cuvée marries the aromatic freshness of Glera with the rich, rounded body of Chardonnay. It is a fantastic, versatile choice for weekend gatherings, celebratory toasts, or simply treating yourself at the end of a long week.
Tasting Notes & Food Pairings
- The Profile: A vibrant, layered nose of white peach, crisp golden delicious apple, and a subtle hint of white blossoms lead into a beautifully balanced palate with fine, energetic bubbles and a refreshing, citrus-driven finish.
- Classic Pairings: Perfect with seafood risotto, pan-seared scallops, or a fresh antipasto platter featuring cured meats and mild, creamy cheeses.
- Irish Favourite Pairings: A brilliant match for an upscale Irish takeaway chicken snack box; the sparkling acidity cuts right through the rich, savoury fats of the fried chicken, while the lively effervescence lifts the palate clean. It also pairs wonderfully with a comforting home-cooked fish pie, where the structured Chardonnay element in the blend effortlessly complements the rich, creamy white sauce without overpowering the delicate flaked fish.
How the wine is made
This unique Gran Cuvée is crafted from a masterfully balanced blend of Glera and Chardonnay grapes grown in the sun-drenched vineyards of Veneto. The fruit is carefully selected and harvested to preserve optimum freshness and acidity before undergoing separate primary fermentations. The components are then blended for a secondary fermentation in temperature-controlled stainless steel tanks using the Charmat method, allowing the structured weight of the Chardonnay to integrate seamlessly with the light, dancing effervescence of the Glera.
Why we love this producer
Dovitia Vini, the passionate family-run winery behind the BonaDea line, represents over a century of deep-rooted agricultural tradition in the Veneto region before launching their own bespoke bottles. The name BonaDea translating to "Great Mother Earth" reflects the family's core philosophy of humility and profound gratitude for the natural cycles of their land. Rather than enforcing industrial dominance over the soil, they credit the exceptional quality and abundance of their annual harvest to the sheer generosity of the terroir itself.
Sustainability & Farming Practices
The estate prioritizes safeguarding the environment through conscientious, proactive green standards:
- Certifications: Officially Certified Organic, guaranteeing that the vineyard is managed entirely without synthetic pesticides, herbicides, or systemic chemical fertilizers.
- Vineyard Practices: The family maintains a biodiversity-friendly environment in the vineyard, relying entirely on natural methods to nourish the vines. Demonstrating their complete commitment to the eco-cycle, they even redesigned their packaging to feature transparent consumer guidelines for responsible recycling and minimizing waste after the bottle is enjoyed.
