Tasting Notes & Food Pairings
- The Profile: An elegant and complex nose reveals delicate white flowers, ripe golden apple, and juicy pear, leading into a velvety, harmonious palate with fine, persistent bubbles and a remarkably clean, uplifting finish.
- Classic Pairings: Pairs beautifully with authentic Italian prosciutto ham, freshly shucked oysters, crab claws in garlic butter, or light vegetable risottos.
- Irish Favourite Pairings: A sublime partner for a premium chipper fresh cod and chips; the wine's vibrant carbonation and high acidity act like a palate cleanser, lifting the heavy batter and rich oils right off the tongue. It is also an exquisite match for a home-cooked Irish chicken and mushroom vol-au-vent, where the subtle residual sugar of the "Extra-Dry" style cuts through the rich, creamy sauce while complementing the buttery puff pastry.
Awards & Accolades
- Official Awards: Gold Medal Winner at the International Wine Awards in Vienna 2021.
How the wine is made
This sparkling wine is crafted from 100% organic Glera grapes grown on the vertigo-inducing, sun-drenched hills of Valdobbiadene, where the steep terrain requires meticulous hand-harvesting. The grapes are carefully sorted to ensure only the finest fruit enters the winery for a gentle pressing and cool primary fermentation. The secondary fermentation is conducted slowly under strict temperature controls using the traditional Charmat method, allowing the fine, integrated bubbles to develop without overshadowing the premium terroir. Finished in the classic Extra-Dry style, it strikes an impeccable balance between a smooth, rounded mouthfeel and a crisp, refreshing spine.
Why we love this producer
Dovitia Vini, the passionate family-run winery behind the BonaDea line, represents over a century of deep-rooted agricultural tradition in the Veneto region before launching their own bespoke bottles. The name BonaDea translating to "Great Mother Earth" reflects the family's core philosophy of humility and profound gratitude for the natural cycles of their land. Rather than enforcing industrial dominance over the soil, they credit the exceptional quality and abundance of their annual harvest to the sheer generosity of the terroir itself.
Sustainability & Farming Practices
The estate prioritizes safeguarding the environment through conscientious, proactive green standards:
- Certifications: Officially Certified Organic, guaranteeing that the vineyard is managed entirely without synthetic pesticides, herbicides, or systemic chemical fertilizers.
- Vineyard Practices: The family maintains a biodiversity-friendly environment in the vineyard, relying entirely on natural methods to nourish the vines. Demonstrating their complete commitment to the eco-cycle, they even redesigned their packaging to feature transparent consumer guidelines for responsible recycling and minimizing waste after the bottle is enjoyed.
