Tasting Notes & Food Pairings
-
The Profile: This cuvée presents a vibrant, persistent perlage with a refined nose of white blossoms, orchard fruits, and a hint of toasted brioche. The palate is beautifully rounded, balancing crisp acidity with a creamy, lingering finish that feels both modern and sophisticated.
-
Classic Pairings: It is a superb match for fresh oysters, soft cheeses, or delicate tempura vegetables.
-
Irish Favourite Pairings: For a truly elevated treat, pair this with a classic fish and chips from your local chipper; the wine's fine bubbles and lively acidity cut right through the richness of the batter, acting as a perfect palate cleanser. For a lighter, home-cooked option, serve it alongside a fresh Chicken Caesar Salad; the wine's bright acidity balances the creamy dressing and salty parmesan, while the Chardonnay in the blend provides enough body to complement the grilled chicken. Alternatively, enjoy it with a warm, artisanal ham and farmhouse cheddar toastie, where the richness of the melted cheese finds a perfect, sparkling counterpoint.
How the wine is made
This Gran Cuvée is crafted with a focus on precision, blending estate-grown Glera with premium Chardonnay to achieve its unique structural complexity. The fruit is hand-harvested at peak maturity from high-altitude Veneto vineyards, where the soils and microclimate impart a distinctive mineral elegance. The winemakers employ minimal intervention and careful temperature-controlled fermentation to preserve the delicate aromatic compounds, resulting in a sparkling wine that prioritizes purity and estate-driven character.
Why we love this producer
BonaDea is a passionate project born from a family legacy with deep-rooted history in the Veneto region. For over a hundred years, the family dedicated themselves to growing and cultivating the finest grapes for other winemakers, before finally taking the leap to craft and bottle their own estate-driven creations in 2015. This transition bridges the gap between generational wisdom and modern artisan winemaking. Their philosophy is simple yet profound: maintaining total control over the value chain to deliver authentic, premium wines that speak honestly of their heritage.
Sustainability & Farming Practices
Rooted in a philosophy that honours the earth, the estate prioritizes natural harmony over industrial intervention:
- Vineyard Practices: The vineyards are managed with a strict focus on eco-conscious farming, protecting local biodiversity and practicing minimal chemical intervention to maintain pristine soil health.
