How the wine is made
The grapes are harvested at the break of dawn, between 4:00 AM and 5:00 AM, to lock in natural cool temperatures and protect the delicate fruit aromas. Transported via a gentle conveyor belt system to prevent any premature crushing of the berries, the Gamay undergoes an incredibly gentle pressing before a temperature-controlled fermentation in stainless steel. It is then aged on its fine lees for two months, resulting in a bone-dry finish with less than one gram of residual sugar. To maintain absolute purity, the winemakers add no sulfites during the entire vinification process, applying only the bare minimum required just before bottling to ensure stability.

- Minimal Intervention: Vinification is conducted entirely without added sulfites, utilizing natural bioprotective yeasts on the harvest, with only a trace amount added at bottling to preserve the wine's integrity.
