How the wine is made

Crafted by the Ardagna family in the rolling hills of Salemi in western Sicily, where clay-loam soils and cool coastal breezes create ideal conditions for aromatic varieties. Hand-harvested in mid-September, the organically grown Zibibbo grapes undergo a gentle pressing before controlled-temperature fermentation in stainless steel to preserve their vibrant natural aromatics. The wine is aged on fine lees in stainless steel tanks for five months with periodic *bâtonnage* (lees stirring), imparting a velvety, enfolding texture while maintaining pristine fruit purity.
