Tasting Notes & Food Pairings
The Profile: An aromatic burst of ripe blackberry, mulberry, and dark plum, laced with complex hints of eucalyptus, fresh mint, and warm vanilla. On the palate, it delivers deep red and black fruit flavors supported by fine, dusty tannins and structured French oak, finishing on a long, elegant, and earthy note of leather and spice.
Classic Pairings: Roasted rack of Irish spring lamb with rosemary, pan-seared dry-aged ribeye steak, or mature, crystal-rich vintage Cheddar.
Irish Favourite Pairings: The Classic Irish Spice Bag: A late-night Irish favourite that pairs surprisingly well with Cabernet. The salty, crispy chicken and chips soften the wine’s tannins, while its ripe plum, blackberry, and subtle mint notes balance the warming Chinese five-spice.
The Ultimate Ham & Cheese Toastie: A classic Irish comfort food that pairs beautifully with Cabernet. The rich, melted Irish cheddar softens the wine’s tannins, while the salty Wiltshire ham brings out its ripe fruit and subtle notes of vanilla and oak.

How the wine is made
Crafted from 90-year-old, dry-grown vines in the Sweet Briar Vineyard, this Cabernet Sauvignon is handpicked at peak ripeness and aged for 24 months in French oak barriques. The result is a wine with concentrated fruit, fine tannins, and excellent aging potential.
Why we love this producer
There is a beautiful homecoming story in every bottle of O’Dwyer. Founded by Tipperary native Donal O’Dwyer and his Australian wife Judith, the estate was born in 2004 during a family road trip when they fell in love with a small vineyard north of Clare—a region whose name and rolling green hills instantly reminded Donal of his school years in Ireland. Together with local vineyard legend Dick Bryksy, they have poured pure passion and Irish heart into restoring these historic vines, producing small-batch, world-class wines that bridge the Southern Hemisphere with home.
Sustainability & Farming Practices
The historic Sweet Briar vineyard is farmed using traditional, low-impact methods. The 90-year-old Cabernet Sauvignon vines are completely dry-grown, eliminating the need for artificial irrigation and conserving precious local water. Hand-harvesting ensures the ancient, gnarled vines are treated with care, while minimal chemical intervention across the estate's boutique vineyard preserves natural soil biodiversity.
