How the wine is made

This premium single-vineyard Shiraz is crafted using traditional, hands-on methods from selected plots in the Sweet Briar Vineyard. The grapes are processed in small, two-tonne open fermenters, where they are hand-punched and gently pressed to extract rich, pure color and robust structure. The wine is then matured in premium French oak barriques for 24 months. This slow oak integration polishes the naturally bold, grainy tannins and allows the wine to develop its signature complexity while retaining excellent aging potential.


Why we love this producer

There is a beautiful homecoming story in every bottle of O’Dwyer. Founded by Tipperary native Donal O’Dwyer and his Australian wife Judith, the estate was born in 2004 during a family road trip when they fell in love with a small vineyard north of Clare—a region whose name and rolling green hills instantly reminded Donal of his school years in Ireland. Together with local vineyard legend Dick Bryksy, they have poured pure passion and Irish heart into restoring these historic vines, producing small-batch, world-class wines that bridge the Southern Hemisphere with home.


Sustainability & Farming Practices

Vineyard Practices: The historic Sweet Briar estate is farmed using low-impact, sustainable methods designed to protect the natural ecosystem of the Clare Valley. The vines benefit from boutique, hand-tended care and are hand-harvested to prevent damage to the older soils. By avoiding heavy industrial machinery and utilizing minimal chemical intervention, the O'Dwyers work in harmony with the local environment to preserve its vibrant biodiversity.
