Tasting Notes & Food Pairings

The Profile: A shimmering straw yellow with greenish glints, bursting with fresh aromas of lemon zest, ripe white peach, green apple, and white flowers, accented by subtle herbal thyme and a distinct mineral tang. The palate is crisp, rich, and energetic, driving vibrant citrus flavor toward a dry, intensely refreshing finish. * **

Classic Pairings:

Fresh oysters with lemon mignonette, grilled sea bass with herbs, crab linguine, or creamy pecorino cheese.

Irish Favourite Pairings:

  • Fresh Cod & Chips from the Local Chipper: The wine's bright acidity works like a squeeze of lemon, cutting through the crispy batter and salty chips while its smooth texture pairs beautifully with the delicate cod.
  • Pan-Seared Dublin Bay Prawns in Garlic & Herb Butter: The wine's citrus notes and mineral freshness balance the richness of the garlic butter, complementing the sweet prawns and leaving a clean, refreshing finish.

Awards & Accolades

Official Awards: Consistently decorated at international wine competitions, earning Gold Medals at prestigious events including the *Mundus Vini* Summer Tasting and *AWC Vienna*.

Vivino: Rated highly by the global community, placing it securely in the Top 5% of all Pecorino wines in the world on Vivino.

How the wine is made

Grown in certified organic vineyards nestled in the hills of Abruzzo at an elevation of nearly 300 meters, where cooling breezes from the Adriatic Sea preserve bright natural acidity. The low-yielding vines are hand-harvested in early September to guarantee optimal freshness and grape sorting quality. Vinification takes place in temperature-controlled stainless steel vats with short skin contact, followed by aging on its fine lees in thermo-conditioned stainless steel and concrete tanks to build rich texture and complexity without any oak influence.

Why we love this producer

Established originally in 1966 in the heart of Teramo, Torri Cantine has evolved into a boutique estate spanning 60 hectares of pristine, organic vineyards running between the Adriatic Sea and the Apennine Mountains. Guided by a commitment to minimal-intervention winemaking and absolute respect for the Abruzzo landscape, they focus on preserving native Italian varieties. We love them because they craft energetic, estate-bottled organic wines that showcase true Italian terroir while staying accessibly priced and utterly delicious.

Sustainability & Farming Practices

Certifications: Certified Organic (EU Organic IT-BIO-009), guaranteeing the vineyards are managed without chemical pesticides, synthetic herbicides, or systemic fungicides.

Vineyard Practices: The estate works in complete harmony with Abruzzo's natural ecosystem, utilizing hand-harvesting, natural cover crops between vine rows to maintain soil health, and minimal sulphur additions during vinification
