How the wine is made
Grown in the sun-drenched, calcareous, and brilliantly well-drained soils of the Salento peninsula in Puglia, the grapes benefit from hot daytime sun and refreshing sea breezes. The organic fruit is harvested at peak freshness and undergoes a gentle, soft pressing before temperature-controlled fermentation at a cool 14°C to safeguard its delicate aromatics. The separate lots are aged entirely in stainless steel tanks on their fine lees to lock in maximum freshness before being blended, where the local Verdeca lends crisp structure and the Sauvignon Blanc contributes intense herbal and citrus complexity.
